Reviving forgotten cuts

We’ve teamed up with Alastair Butler of Blythburgh Free Range Pork and Sophie Dorber chef-proprietor of The Anchor at Walberswick to promote less popular cuts of pork.

At the Anchor's sister restaurant, The Swan at Stratford St Mary, head chef Steven Miles has added a delicious trio of pork dish to his menu using all the forgotten parts, including cuts such as belly, cheek, trotter and offal.
